Microgreens are very young seedlings of edible plants. They are like miniature baby greens and can be used in similar ways. Grown for only 1 to 3 weeks, they are harvested by cutting them just above the soil at a few inches tall. 

Larger than sprouts but similarly nutrient-packed, microgreens are even considered a superfood!

Microgreens are nutrient-dense and have more nutrients by weight than their full-grown counterparts. Some have been shown to be 40x as nutritious!

Most microgreens have a crisp, mild flavor, but some, like radish and mustard, have a bit of spice. Generally, they taste similar to their full-grown version.

You can add microgreens to salads, sandwiches, wraps, omelets, and even soups! Just don't cook them so that they keep their crunch and don't lose their nutrients. Instead, add them right before serving. Yum!
